During the 15 years of aging necessary for the production of this nectar, nearly 70% of the initial volume of the barrels evaporate, this is called the angels' share.
Subsequently, the remaining rum is delicately bottled " cask strength " in order to preserve the aromatic balance of each vintage. This very old J.M. rum, "vintage" and "cask brut" offers an opulent bouquet of fruity and vegetal aromas giving way to a round attack reminiscent of the generous aromatic palette of the nose. The finish expresses an incredible bouquet of spices.
Located in the north of the island of Martinique and at the foot of Mount Pelée, the Rhumerie J.M distills and raises old J.M. rums. It was in 1914 that Jean-Marie Martin, who gave his name to JM rums, sold the property to Gustave Crassous de Médeuil.
